In this delectable recipe, I’ll show you how to create the most irresistible fudgy cottage cheese brownies that will leave you wanting more. Even better, these brownies are high in protein, thanks to the secret ingredient: cottage cheese. So, get your apron on and prepare to indulge in a healthier twist on a classic treat.

    Cottage cheese is an excellent source of protein, calcium, and essential vitamins. It is a perfect substitute for butter or oil in baked goods. By incorporating cottage cheese into these brownies, you’ll be adding a ton of protein without compromising on taste.

    These ONE-BOWL brownies are super easy to make, high protein, and have the fudgiest texture. Soft, super chocolatey (double chocolate, actually!), and ready in under 30 minutes.

    How to Make Cottage Cheese Brownies

    These brownies are simply made with:

    To make these gluten-free, no-added-sugar brownies, you do the following:

    1. Preheat oven to 350 degrees F and line an 8×8 baking dish with parchment paper. In a food processor or high-speed blender (I use Ninja Kitchen or Vitamix), combine eggs, cottage cheese, and vanilla until smooth. Pour in melted chocolate and puree again until combined.
    2. Whisk together flour, baking powder, sweetener, and cocoa in a medium mixing bowl. Pour cottage cheese mixture into dry ingredients and stir until just combined.
    3. Pour batter into the prepared baking dish and bake for 20-25 minutes (or until a knife comes out cleanly from the center of the pan. Let the pan cool completely on a wire rack before slicing into 9 brownies.

      Made these and added a banana instead of sweetner did regular Choco chips cause it’s what I had and they still came out awesome.

      Made these as dessert tonight. I didn’t have monk fruit sweetener on hand so I had to use regular sugar. These were tasty. I’ll definitely make them again to try with monk fruit sweetener

      I made these tonight, I haven’t tried them yet. Mine came out more dense looking and not as fudge or fluffy as pictured. Any ideas? Is this mixture supposed to be rather thick?

      My batter came out very dense because I used coconut flour so I added another 1/2 cup blended cottage cheese. We shall see, they are in the oven now

      Me and my sister wanted a little late night snackie! And my oh my was this Scrumdiddlyumptious!!!! We are both big backs so we loveeeeee a nice gooey brownie but due to medical reason we now have to be no sugar or gluten. Thank you so much for this recipe will be making again!!! <3

      I tried this recipe. I used coconut flour and it did not work as it came out dry and clumpy. I really tried to get the moisture in by adding milk or oil. I probably made it worse. Next time I’ll try to use regular flour. Hope everyone else’s try at this recipe worked for them.
