    Ingredients

    • 1 ripe banana
    • 2 oranges, peeled and deseeded
    • 3 eggs, whisked
    • 1/4 cup natural almond butter
    • 1 tsp vanilla
    • 1 1/2 cups almond flour
    • 1/2 cup coconut flour
    • 3 tsp baking powder
    • 1 tsp cinnamon
    • 1/2 tsp sea salt
    • 1 cup frozen cranberries

    Instructions

    • Preheat oven to 350°F. Place the banana and oranges in a blender or food processor and blend until smooth. Pour the puree into a large bowl and whisk in the eggs, vanilla, and almond butter. In a separate bowl, mix together almond flour, coconut flour, baking powder, cinnamon, and sea salt. Combine wet and dry ingredients until fully incorporated, then gently fold in the cranberries.
    • Spray a loaf pan with nonstick cooking spray and pour in the batter. Bake for 45–50 minutes, or until the top is golden brown and a knife inserted in the center comes out clean. Allow the bread to cool completely before slicing. Store leftovers in the refrigerator for 4 to 5 days.

      I’ve purchased an entire bag of fresh cranberries but notice this recipe will use perhaps a quarter of the bag. How would it be if I used 2 cups? I’ll freeze them first.

      This bread is fantastic! My oranges didn’t have a lot of flavor going in, but the bread is moist and tasty. I did add a few more cranberries – at most an extra half cup, and about 1/4 cup of Agave syrup. I will be making this again!
